An acclaimed Dubai-based chef is headed to Chicago for an exclusive dinner

Reif Othman and Rodolfo Cuadros are teaming up for Chefs on Tour at Time Out Market Chicago.

Time Out Market Chicago stars many of the city’s best culinary talents and restaurants under one roof and later this month, it’ll host an acclaimed, Dubai-based chef for an exclusive dining experience.

On Sunday, October 22, Reif Othman comes to the food and cultural market in Fulton Market as part of Time Out’s Chefs on Tour series. Launched earlier this year, the series brings together Market chefs from around the globe for unique collaborative dinners. Othman will work with chef Rodolfo Cuadros of Lil’ Amaru to create an eight-course menu that showcases both their brands of cooking.

“I’m looking forward to collaborating with Chef Rodolfo and bringing our different cultural cuisines together while also leaning into his passion for plant based eating and getting to know his culinary traditions. This will be a one-of-a-kind experience and I can’t wait to serve our guests the incredible menu we have come up with together,” Othman said.

Othman, who is originally from Singapore, is the mind behind Reif Japanese Kushiyaki in Time Out Market Dubai. Specializing in clever twists on Japanese street fare, the concept has garnered numerous accolades like a Michelin Bib Gourmand designation in 2022 and a spot on the Middle East & North Africa’s 50 Best Restaurants 2023 list. Cuadros is the executive chef and owner of several Chicago restaurants—Amaru, Bloom Plant Based Kitchen and Don Bucio’s Taqueria—and focuses on pan-Latin and plant-based cuisines. 

The dinner will offer guests the opportunity to sit at a communal table in front of an open kitchen, where Othman and Cuadros will cook and present their dishes. Some of highlights you can expect to enjoy from the Dubai chef include thinly sliced wagyu with tonnato espuma and tuna jus; Reif Fried Wing dressed in Nagoya tebasaki sauce with caviar; and black cod with wasabi jalapeno dressing, fennel and green apple. Cuadros will offer bites like kampachi ceviche with apple and kelp caviar; malanga goat cheese agnolotti; and a tres leches dessert. All courses will also be paired with specially-curated beverages.

“It’s been exciting to work with [Othman] across thousands of miles over the past few weeks to come up with an incredible menu and new dishes that complement his, bringing our ideas and cuisines together to create a chef’s table like no other for our guests. It’s going to be a truly fun, fine dining experience,” Rodolfo said.

Tickets for Chefs on Tour are available now via Eventbrite. The cost is $150 per person.
